Eggplant Tapenade in the Slow Cooker

3-4c chopped eggplant
1-2c chopped tomato
1 jar green olives (I omitted because I didn’t have any)
4 cloves garlic minced
2-3 tsp capers
Throw all ingredients into slow cooker and set on low for 7-9 hours…
Before serving add:
1-2tsp balsamic vinegar
6-8 basil leaves chopped
S&P
Stir and serve!
